The facility has over 240,000 sq.ft. of processing area under one roof on 20 acres.
It contains over 22,000 sq. ft. of racked cold storage maintained at -5ºF; and 3,200 sq. ft. of tempering space. Mercer processes the equivalent of over 60,000 pounds of raw material per day.
Products are loaded and unloaded in separate temperature controlled rooms.
The temperature and humidity are also controlled in packing rooms, dry processing rooms, and the areas dedicated for milling and screening products.
Many automated systems are in place for improved handling of products and for cleaning and sanitizing the equipment. Automation helps Mercer control costs by increasing production and supporting our commitment to achieving the highest standards for food quality.
Mercer recently installed a facility-wide computer system to better integrate documentation from all departments increasing access to information.
