What is Freeze-Drying?

Home » About Us » What is Freeze-Drying?

We don’t like to mess around with nature. At Mercer Foods, we just take the best that nature has to offer and simply freeze-dry it. Freeze-drying preserves the structure, color, flavor and nutritional content of food by removing moisture as a vapor in a vacuum. That’s it. That’s what we’ve done for over 40 years and will do for years to come. And we’d love to show you just how good freeze-dried foods can be any time of day.

Our Freeze-Drying Process

Freeze-drying is simple, and that’s part of what makes it so special. It just takes the moisture out of food.

Here’s how it’s done:

Freeze Dry Process

1. Fresh produce is harvested at prime ripeness.

2. Fruits or vegetables are washed, peeled/cut and frozen.

3. Fruits or vegetables are placed on drying racks in vacuum drying chambers.

4. The moisture is evaporated at extremely low temperatures.

Why Does it Make Sense?

Real fruits and vegetables that are purely all-natural – clean label with no added colors, sugar, flavor, sulfur or preservatives. All products support a plant-based diet and retain their vibrant colors and true flavors!

From whole pieces to fruit slices, wedges, dices to powders – these fruits and vegetables can be used any time of day for breakfast, lunch or dinner.

No waste, less labor and a lower cost per piece vs. fresh fruit.
